Forts in AC3 are like Templar dens in Revelations.  They are manned with lots of men and they are quite good at wielding their firearms.  Your task in each (I've done 3 of the 7 so far and all are similar) seems to be to torch the powder magazine and then kill the fort commander.

Each fort is different, and mostly they are not on the map; you have to stumble upon them because you cannot purchase a map of their locations.  These are fun missions because your approach appears to be a little different in each, and they are full of combat.

And once you take one of those forts... what happens? Does it extend your influence somehow? Do you have to defend it as in Revelations?

Thank goodness you don't need to defend it!  It is in patriot hands permanently, and you get a reduced tax rate for the convoys you send with your crafted goods.  I don't know how that works yet because I have not dome much with crafting.  However, it seems like it has potential.
